本专辑旨在发表关于食品成分和污染物检测方面的前沿研究。
食品成分检测技术是食品功能和食品安全研究的基础。由于食品基质的复杂性和食品成分检测的多样性、多源性和痕量性等典型特点，传统的分析手段和简单的仪器分析方法很难得到满意的结果。因此，食品成分检测已经成为分析科学，尤其是仪器分析科学中越来越关注的研究领域。
色谱-质谱法是食品成分检测中最有效、应用最广泛的分析技术，近年来得到了长足的发展。新的质谱仪器、新的分析理论、新的检测方法和新的应用场景不断涌现，在食品蛋白质组学、代谢组学、食品安全检测和食品真实性鉴定等方面发挥了前所未有的作用，推动了食品成分分析技术的进步和食品功能与安全研究的发展。
本期专刊诚邀您投稿有关质谱特别是高分辨率质谱在食品安全、营养和质量方面的应用研究。原创研究和综述文章均可投稿，尤其是质谱在未知成分的非定向筛选和鉴定中的应用的相关文章。
研究主题包括但不限于：食品化学成分的质谱软电离裂解规律；食品功效成分和化学污染物的非定向筛选；基于质谱的食品真实性鉴定方法；食品蛋白质的质谱鉴定与定量检测；食品微生物的质谱鉴定方法

期刊简介（Journal Overiew）
Journal of Food Quality (IF 1.92) is a peer-reviewed, Open Access journal that publishes original research articles as well as review articles related to all aspects of food quality characteristics acceptable to consumers. The journal aims to provide a valuable resource for food scientists, nutritionists, food producers, the public health sector, and governmental and non-governmental agencies with an interest in food quality.
Pre-harvest research will only be considered where it focuses on the effects of pre-harvest conditions on food quality. Articles regarding food safety may be considered, such as when a comprehensive evaluation of a food product or technology is reported.
